He narrated that right after waking and before facing Arima. Personally I believe the first version, where he doesn't remember what happened to Hide. The previous version of this scene does not include Hide telling Kaneki to eat him, and he says he woke up with no recollection of what happened to Hide. It's entirely possible that Kaneki, like you, concluded that the only thing he could have eaten to recover in the sewers was Hide and since Hide is still missing with no trace since the operation then Kaneki must have eaten all of him, and so he fills in holes in his memory with assumptions. People speak like that as if there is zero chance Kaneki ate him. Would he even be able to recognize him anymore?
